What is your favorite part of being a restaurant owner in Asheville?
Being a part of our awesome food community.
What is the background of your restaurant’s name?
It became Taqueria Con Cuida in 2011 and then switched over to The Grey Eagle Taqueria in 2012. Our Latin Cuisine works perfectly down here in the RAD, especially for folks coming in for lunch OR dinner and a show. It’s quick, light and easy.

Luella’s Pulled Free Range Chicken and their hush puppies 😉

Insta Cut 50~ It’s magic! It speeds up our Pico De Gallo prep time like no other tool in the kitchen.
