What is your favorite part of being a restaurant owner in Asheville?

Getting to know our guests! It’s such a great feeling to be a part of our community- we have neighbors in three, sometimes four days a week!
What is the background of your restaurant’s name?
Not sure- it was the original name when it opened 9 years ago- we were happy to keep it when we bought the shop last year. Everyone already knew the name! (Plus we had a bunch of pens and t-shirts with the logo!
What ingredient could you not live without?
Without a doubt Apple Brandy Dry-Aged Beef from Wilkesboro, NC.
What is your favorite dish on your menu?
My favorite dish is our Hot Dog. It’s developing a cult following, and word is getting out.
What is your favorite dish from a fellow AIR restaurant’s menu? 
Cinco Jotas 100% Iberico Jamón at CÚRATE
Why did you choose Asheville to open your restaurant?
I didn’t open it, but I did move my family here to be a part of it all. We believe the people of WNC are willing to support the restaurants and purveyors that are sourcing responsibly and building a professional environment.
What is your favorite chef’s tool and why?
“8” breaking knife. It’s so much more comfortable than an iPhone
