What is your favorite part of owning a restaurant in Asheville?

It is my family’s joy to serve our internal and external customers, exceeding their expectations through consistent management of expectations. The ever changing dynamics of staff and guests make owning a restaurant a fun and rewarding career.

What is the background of your restaurant’s name?

Anthony and I see the importance of growing Historic Biltmore Village as one of the “must visit” areas of Asheville, adding HBV to our name was our way of making The cantina a destination within a destination

What ingredient could you not live without?

Avocados!!!   unfortunately there are many times that relying so heavy on this commodity item is cost prohibitive, but our signature grilled avocado and avocado margarita are two of our fan favorites.

What is your favorite dish on your menu?

I LOVE our Blue Corn Nachos, these are simply 3 or 6 pieces of blue corn nacho chips with black beans cheese, your choice of protein and an avo slice.  It is a perfect nacho in every bite.

What is your favorite dish from a fellow AIR restaurant’s menu?

What a tough questions, I am crazy about everything on Reza’s menu, especially their lamb dishes.  Corner Kitchen’s Breakfast Salad and root chips are also something I crave.

Why did you choose Asheville to open your restaurant?

The restaurant business and Asheville picked us!

What is your favorite chef’s tool and why?

My favorite chef tool has to be the salamander, melty and cheesy are also my favorite descriptors.
