Prep Cook

Salary Range: $23-$25/hr

Full-time: 40+ hours/week

Red Fiddle Vittles is a catering company and local market that features high-end, gourmet food items that utilize and celebrate locally-produced ingredients. On the catering side of our business, we offer a high-end full-service event catering program, platters for pickup/delivery, and cheese & charcuterie grazing tables. On the market side, we prepare a weekly take-home dinner as well as premium freezer foods for purchase from our South Asheville storefront. This position would support both sides of the business and would be responsible for preparing a wide range of foods, including some items that are prepped each week as well as menu items for catering and take-home dinners that change week to week.

Prep Cook Job Responsibilities:

  • Perform routine kitchen tasks with focus and urgency.

  • Follow the prep list and communicate ingredient needs.

  • Label and stock all ingredients on shelves so they are organized and easily accessible.

  • Follow recipes and cooking instructions as needed.

  • Prepare cooking ingredients by washing and chopping vegetables, cutting meat, and other meal prep..

  • Undertake basic cooking duties, such as reducing sauces, roasting meats/vegetables, grilling meats, and operating a deep fryer.

  • Prepare and package food for retail purchase.

  • Maintain a clean and orderly kitchen by washing dishes, sanitizing surfaces, and taking out trash.

  • Inventory ingredients and communicate ingredient/equipment/supply needs daily.

  • Acknowledge and take responsibility for mistakes; create methods and systems for constant improvement

  • Receives food deliveries; confirms accuracy and quality of food deliveries; ensures that all food and other items are stored properly and in an organized manner.

  • Comply with nutrition and sanitation guidelines.

  • Occasional customer interaction and making deliveries may be required

  • Willingness to work as a team and contribute to a fun and positive kitchen culture.

  • Perform other kitchen duties and cleaning tasks as assigned.

This is a full-time paid position. We guarantee 40 hours per week at a living wage. The wage range for this position is $23-$25/hour (plus tips) depending on experience, and is eligible for overtime pay as required. This position includes health, dental, mental health, and employer-sponsored IRA benefits. Schedules can be somewhat flexible week to week, but are primarily 9AM-5PM Monday through Friday. Some evenings and weekends may be required.

Prep Cook Qualifications / Skills:

  • Thorough knowledge and understanding of health and safety rules in a kitchen

  • Knowledge of and proven ability to execute of basic cooking techniques

  • Exceptional organizational skills

  • Patience

  • Manual dexterity and advanced knife skills

  • Communication skills

  • Close attention to detail and motivation to produce high quality products and results

  • Ability to work under pressure and adapt

  • Ability to stand for an 8 hour shift (with breaks) and lift up to 40 pounds

Education and Experience Requirements:

  • High school diploma or equivalent is desirable

  • Training from a culinary school is an asset

  • ServeSafe certification or willingness to become certified

  • 2-4 years experience as a prep cook or line cook

  • Valid driver’s license and reliable transportation
