What is your favorite part of being a restaurant owner in Asheville?
My favorite part of owning a pub is the ability to provide public with a cool meeting place and serve quality food, drink and music.
What is the background of your restaurant’s name?
Jack of the Wood is a synonym for Green Man a mythological spirit of change.
What ingredient could you not live without?
What is your favorite dish on your menu?
On the Jack menu I think the Burger is very good and the Scotch Egg.
What is your favorite dish from a fellow AIR restaurant’s menu?
I love Italian, so I eat at Modesto and Cucina 24.
Why did you choose Asheville to open your restaurant?
We started as a small lunch counter in YMCA. Based on quality and style of food, The opportunity presented itself to open a full restaurant.
What is your favorite chef’s tool and why?
I think knives , to create size and portions, and a fresh herb garden.
