What is your favorite part about being a restaurateur in Asheville?

It is always a pleasure to see the smile on folks’ faces when they bite into a juicy grassfed burger!

What is the background of your restaurant’s name? 

Our farm is located in the “Hickory Nut Gap.” Pretty straightforward! Beyond the simple name, there is a lot of history over the last hundred years since the farm was founded in 1916.

What ingredient could you not live without?

Pasture raised pork and grassfed beef!

What is your favorite dish on your menu?

The HNG Burger: grassfed beef, bacon, lettuce, tomato, onion, herb mayo, and cheddar cheese!

What is your favorite dish from a fellow AIR restaurant’s menu?

Taco Temple’s Santa Barbara Tacos with HNG Beef are soooo good!

Why did you choose Asheville to open your restaurant?

This land has been in Jamie Ager’s family in Fairview since 1916.  Jamie and his wife Amy built the Farm Store in 2000. We built the kitchen in 2015. So you could say, history decided for us!

What is your favorite chef’s tool and why?

HNG butcher Clarke Conroy: The butcher’s knife! Cutting meat and getting good looking steaks and chops is a satisfying feeling.
