What is your favorite part of being a restaurant owner in Asheville?

Our favorite part of being a restaurant owner in Downtown AVL is being right in the heart of it all.  There really is never a dull moment.  It seems to be that as AVL grows, all of us who have been here for a while seem to just get more and more supportive of each other which is a really nice community to be a part of.  Nobody knows like a fellow restauranteur.

What is the background of your restaurant’s name?

Mountain Madre’s name is from my (Paige) college days at West Virginia University.  A longtime tradition and beloved song there is John Denvers “Country Roads” and I always thought Mountain Mama would be a great name for a restaurant and it just went from there:)

What ingredient could you not live without?

The ingredient I could not live without is an Avocado 

What is your favorite dish on your menu?

Our favorite dish on the menu is the Enchiladas.  Hands down, the best enchiladas around.

What is your favorite dish from a fellow AIR restaurant’s menu?

Our favorite dish from another restaurant is – anything from Vinnies Neighborhood Italian, Marcos, or Strada!  If we aren’t eating Mexican, we are eating Italian!  We are a family of 6 and those are the two cuisines we can all agree on:)

Why did you choose Asheville to open your restaurant?

We chose to open our restaurant here in AVL because this is our home.  We have been here for almost 20 years and have always been in the restaurant business here.

What is your favorite chef’s tool and why?

Our chef’s (Kyle Allen) favorite tool is “the mighty towel…after all that is said and done, the towel keeps you organized and clean, ready for the next day.”  – beyond the fact that he is an amazing chef, this is just one of the reasons we love him so.
